It’s that time of year again! The pandemic has put a bit of a damper on traveling this year, so we’d like to infuse a little international flair into our Thanksgiving dishes. While we’re not planning on gathering with our families this year, we are going to make some delicious food.
We’re going to start our Thanksgiving meal off with something hearty and warm, like roasted root veggie soup. You might like something a little bit more earthy, in which case this Russian mushroom soup is the perfect appetizer for you.
If you’re craving something green to pair with your soup (or a nice light lunch before your feast for dinner), may we suggest this vegan brussels sprout Caesar salad. For some more autumn vibes, try this Italian-inspired farro salad with butternut squash and kale.
Speaking of farro, we’re going to make these creamed greens with farro as an alternative to green bean casserole. The veggie version of the French classic white bean and mushroom cassoulet would also be a good addition to your table. While we’re thinking about side dishes, consider the Irish-inspired mashed potato dish dubbed colcannon. It would be delicious paired with something light and nutty, like this butternut squash wild rice.
